1 ripe banana
3/4 cup oats
½ cup protein powder
1 tsp aluminum-free baking powder
1/4 tsp baking soda
Pinch of Pink Himalayan salt
1 tsp cinnamon
1 egg
1 cup unsweetened almond milk
· 1/2 tbsp virgin coconut oil
1 tsp pure vanilla extract
Toppings:
One additional ripe banana sliced, and/or dark chocolate chips for garnish
Organic pure maple syrup for topping
Preparation
Step 1
Add all ingredients except toppings to a blender and blend until combined well.
Step 2
Heat a skillet over medium heat and spray with cooking spray.
Step 3
Add 2-3 spoonfuls of batter to skillet (a 4 inch size pancake).
Step 4
Cook until small bubbles appear, about 5 minutes.
Step 5
Then carefully flip & cook another 4 minutes until both sides appear brown.
Step 6
Top with sliced bananas, sprinkle of chocolate chips and a drizzle of organic maple syrup.
